Fast, fast, fast apple crumble in a glass



Everybody knows how to make an apple crumble but not everybody has enough time to actually make it...and bake it.

You are lucky enough because I am used to be a major fan of the “most gain for the least pain” recipes and this is absolutely one of them…


..Soooo let’s get started!





INGREDIENTS

serves:4/6 
depending on the size of the glasses


100g/3.5oz cookies or any other dry biscuits

50g/1.7oz butter

1 tablespoon sugar (I prefer cane sugar)

1 Golden apple

300g/10.5oz Ricotta cheese (or any other fresh creamy cheese)

50g/1.7oz icing sugar

2 teaspoons cinnamon powder



METHOD

1. Chop the biscuits (I added also some chopped nuts)

2. Peel the apple and cut it into little cubes (I added some lemon juice to give the apple extra flavour and to avoid that it turns black)

3. Melt the butter in a non-stick cooking pan, low heat. When the butter is melted then add the apple cubes, the chopped biscuits, the sugar and the cinnamon powder. Cook it all

4. Put the Ricotta cheese in a bowl together with the icing sugar and start mixing it with an electric whipper until you’ll get a creamy soft texture 

5. Serve into little glasses by alternating a layer of crumble with a layer of Ricotta cream

6. Sprinkle the little glasses with the cinnamon powder and place them in the fridge to chill for at least 30 minutes. Once chilled they’re ready to be served.

TIPS

In my opinion every recipe isn’t yours until you customize it. And with the apple crumble it is pretty easy to do it.

You can replace the apple with pretty much any other fruits. Try with the peaches…you’ll love it!

As I did, you can add to your chopped biscuits some nuts and any dried fruits.

For a healthier version of this recipe you can replace the butter whit a syrup made of water, sugar (or sugar cane) and some lemon juice and you can replace the biscuits with oat flakes, dried fruits, muesli and some nuts. You can use these ingredients also for the topping.

If you don’t like the taste of the cinnamon, you can use the juice of an orange or some ginger powder.

Unless you live in Italy, to find fresh Ricotta cheese from the cheese factory or from the farmers is going to be hard (I know that). 
While I was in the States I could find "real" Ricotta at Whole Foods. Otherwiswe the best alternative that you have is to look for some industrial Ricotta in any supermarket or, even better, in some Italian grocery store.
